Given that my blog is called “S’mores & Champagne”, it’s only fitting that I share a s’mores inspired recipe with you. S’mores are a favorite treat of mine… I make them year round by roasting them in a foil packet in the oven. I love that they can be customized by using specialty marshmallows, different types of cookies, and varied chocolate candies. This recipe, however, maintains the traditional flavors we’ve all come to expect when eating s’mores – milk chocolate, graham crackers, and sticky-sweet marshmallows. These crispy treats are fantastic to make for a crowd or pack in your children’s lunch boxes. Just make sure to save some for yourself! Enjoy.


S’mores Crispy Treats
Makes 16 squares
Ingredients
5 cups Golden Grahams cereal, lightly crushed (see cook’s note below)
10 oz. mini marshmallows, separated
4 Tbsp. butter
¼ tsp. salt
6 Hershey’s milk-chocolate bars
Preparation
Spray an 8 x 8 inch pan with cooking spray. Melt butter in a large saucepan over low heat. Reserve ½ cup of the marshmallows and add the remaining marshmallows to the saucepan. Stir until the marshmallows have melted completely. Add the salt, and stir to combine. Remove from heat. Add the Golden Grahams cereal and stir to combine. Then, add the remaining ½ cup of marshmallows to the mixture and stir to combine.
Gently press ½ of the marshmallow and cereal mixture into your greased pan and flatten using a spatula or your hands. The mixture will be sticky, so I recommend spraying cooking spray on the spatula or your hands before pressing down the mixture. Then, gently press an even layer of Hershey’s milk-chocolate bars on top of the crispy mixture. The layer of chocolate should completely cover the top of the crispy mixture. Add the remaining crispy mixture on top of the chocolate and flatten it into an even layer. If any chocolate pieces remain, those can be pressed into the top of the bars (or eaten!).
Allow the crispy treats to cool. Cut into 2-inch squares and serve.
